2 cups flour

1 cup icing sugar

1/4 tsp salt

8 oz unsalted butter, room temperature

1 egg, beaten (reserve a tablespoon)

1. Pre-heat oven to 400 F

2. Line 9-inch pie shell with parchment paper

3.. Mix flour, icing sugar and salt in a mixer bowl

4. Work butter in with your fingers or use the paddle attachment on your stand mixer until it is crumbly

5. Add egg (except the one tablespoon)

4. Dough should come together and is soft, shiny and pliable

5. Press dough in a 9-inch pie shell lined with parchment paper

6. If you like, make a pattern with a fork

7. Brush top with the remaining egg wash

8. Bake in 400 F oven for 20-25 minutes until golden brown

9. Cool completely in the pan and cut into 16 wedges
